BBQ
Having a nice BBQ in summer is one of the best things. We have had a BBQ a few times during our travels and our favorites are portobello mushrooms with olive oil, garlic and thyme, an easy salad with just rocket, melon/blackberry and a splash of red wine vinegar and ofcourse garlic bread.

Bruschettas, couscoussalad and roasted sweet potatoes
I really like to cook with leftovers it makes me feel a lot better with myself. When I worked in a grocery story, we used to sort through vegetables and fruits in the morning and we could take whatever we wanted of the all the “bad” stuff that we took away. What we didn’t take was picked up by charity. I liked to take quite a lot to make living in Melbourne cheaper.
However, we usually have burgerbuns left over after eating burgers for dinner. I like to cut these in halves, sprinkle with olive oil, garlic and oregano/thyme. If we are lucky to have some tomatoes or cheese I also put this on top. On the picture above, we had the buns with ovenroasted sweet potatoe also sprinkled in olive oil and thyme and a salad that is less “easy”, but it consisted of Quorns Chicken Style pieces, tomatoes, rocket, onions and couscous.

Lentilsalad with feta, sundried tomatoes, roasted pinenuts and rocket. Served with homemade garlic bread with Nuttelex and butter made from a leftover sandwich bread, guacamole and Patties vegetarian rolls.

Vegan Currywurst
One of Pauls favorites from Germany is Currywurst, so above is his version of vegan Currywurst. The sausages are the Hotdog ones from Torfuky. They are bomb!! The ketchup he just mixes with curry powder.

Pastasalad, summersalad and roasted sweet potatoe
I still remember eating this meal in Melbourne, because it really reminded me of being home in Denmark and have a nice dinner outside during summer. Cooking down here we don’t make much effort to make three different dishes, usually we just cook one dish. So its nice to have a plate once in a while with different stuff on it.
This time I made a salad with spinach, avocado, watermelon, blueberry, strawberry and feta and a pastasalad with springonion, cucumber, red onion, sundried tomatoes sprinkled with olive oil and white wine vinegar and ovenroasted sweet potatoe.
Burgers the vegan or vegetarian way
Having a burger for dinner is never bad. We have tried lots of different vegetarian patties and there are lots of good ones out there. The Beyond Burger is awesome, very resemblant to the taste of meat. Its super expensive though. One of my favorites is Quorns or Fry’s schnitzels. They make a good chickn burger. Some of the cheaper patties like Coles own are quite alright as well. One that didn’t turn out well for us is Macros Morrocan Veggie Burgers. It crumbled as it was fried. Another great thing to use as a pattie is portobello mushrooms and that would be a cheap option as well.
However, for the burger we use whatever sauces we have, vegan cheese or normal cheese, salad, cucumber, onions and tomatoes. Sometimes we do a bit ‘fancier’ with mushrooms or something like that.
Veggie pizzas
We looove pizzas, who doesn’t anyway? When I have the time and the patience I make my own pizzadough, but quite often we have just bought some cheap pre-baked bottoms. We have made a few different versions of pizzas, but we usually like to use the same toppings: red onion, jalapenos, chilli, mushrooms, zucchini, potatoe. We have also used olives, capsicum, tomatoes, artichokes, bocconcini cheese (only because I got an expired one from work), aubergine and leftover vegetable mince from burritos or spag bolognese.
